I reduced the recipe by using less fat and omitting the coconut flour – it’s almost Whole30 compliant, if you ask me (wink, wink).
The end result is a light, flaky bread that resembles puff pastry. It gave me hope and inspiration for a yuca puff pastry recipe, or perhaps a pop tart-like pastry filled with warm cashew berry cream… oh, my! I’m getting ahead of myself, though.
