Yucca Drink is a sweet, sweet nectar made by shaking jars full of lemons, sugar, ice, and vodka together for a huge batch vodka drink. I’m not sure why the large batch vodka cocktail is named yuccas, but honestly, it’s so amazing and strong that it doesn’t matter.
I was reminded of a favorite cocktail in my hometown when visiting for the county fair. I recall seeing people stirring jars full of lemons, sugar, ice, and vodka until the yucca drink’s sweet, sweet nectar was ready.

So we’re speculating that thousands of years ago, someone chewed choclo, or Peruvian corn, spit it out, and later returned to discover the corn kernel fizzy (we’re not sure what spit-kick-start-fermented Peruvian corn would look like, but fizzy seems like a decent bet).
Regardless of how it happened, ancient Andean peoples began fermenting beverages from two primary local heavy starch sources: choclo and yucca. Chicha and masato, the cocktails that resulted, have been around ever since. Thousands of years, to be exact, which, whether you agree with the spitting thing or not, is quite astounding.
Chicha, also known as “chicha de jora,” is not the same as “chicha morada.” The chica morada is a non-alcoholic (non-spit) drink made with pineapple and cinnamon. Chicha de jora begins with the same maize, but instead of boiling it, the corn is chewed and spit before being fermented into a beer. Sam Calagione, the founder of Dogfish Head and an obsessive booze archaeologist, inexorably imitated and served this beer in his Rehoboth brewery.
What does the chicha taste like? Chicha de jora tastes “sour,” “like beer,” according to at least one intrepid tourist who discovered it by following the typical indication of a red flag (or red plastic bag) posted outside of a residence. And, by the way, it has a 6% alcohol by volume (ABV). Not bad for a glass that cost roughly $.20.
The goo factor, on the other hand, is moderately stomach disturbing. The girl component, on the other hand, is fascinating. Chicha and masato manufacture were both overseen by women. While they had a little role in ancient Peruvian culture, the quality and presentation of a drink may be seen as a woman’s way of expressing her wrath or approval.
We’d advise against pissing off your wife because she’ll spit in your food, but perhaps the contrary was true: cross me and I won’t spit in your food. Both masato and chicha are still consumed today, thus we should state “is.”
If you’re up for it (and keep in mind that hygienic conditions and Hepatitis B can be serious problems for tourists, so be cautious), finding true masato or chicha will take some effort. The majority of chicha nowadays is prepared with malted barley in the classic beer process. If you have a sense of adventure and are traveling Peru’s tiny towns or vaster wilds and come across a red flag, look in your pocket for a couple dimes. You could just gain a true sense of Peruvian culture and people. Literally.
