How To Freeze Yucca?

All of this tapioca talk may have made you wonder about the texture of the root: It can get sticky once cooked, which some people don’t like. “It has a sweetness, butteriness, and a sticky chewiness that is really enjoyed by about half of the world — so you might at least sample it for the sake of worldliness,” says Elizabeth Schneider, who puts on her parent hat and begs us to try a bite.

Yuca is accessible all year, if not in your local grocery shop, then in Asian or Latin American markets. “Even if you select properly, there may be some waste,” Schneider advises, “so buy more than you think you need.”

Yuca resembles a small, bark-covered baseball bat, albeit “small” is relative: it’s small in comparison to a baseball bat, but it’s a giant tuber. Here’s ours next to a giant garlic clove for comparison’s sake (1, pictured above). You might even come across larger examples, as yuca roots can grow up to a foot in length. Look for yuca that doesn’t have any cracks or mold. To help preserve the root, it is generally typically coated with wax (2, below).

It’s fine if you locate yuca with a cut end exposed on the packaging; this is done to allow you to see the flesh, which should be pure white (7, far below). It may be past its prime if it has dark streaks (5, far below) running through it, indicating that the flavor may be affected. If you see those bits, cut them away, and if they run the length of the root, discard it. (That’s why Ms. Schneider advised you to stock up!)

Yuca has a shorter shelf life than you might think, as it is a thick-skinned root that does not store well. Keep it cool and dry and use it soon — within a few days — or freeze it in peeled chunks (you can buy bags of frozen yuca, too).

Look for the pinkish layer of skin (3, below) beneath the tough, bark-like shell of yuca to make peeling it simpler, according to Elizabeth Schneider. To see the layer skin beneath the bark, split each tuber into smaller 2- to 3-inch chunks and then make a lengthwise slit down each section. Wedge your paring knife beneath the pinkish layer, peel it out along with the bark, and then cut away any pink areas that remain.

After cutting the yuca into chunks, I’ve discovered that simply slicing away strips (4, below) with a paring knife is just as easy, if not easier. Remove the core fibrous cord (6, below) by cutting portions in half or quarters, or remember to do so after cooking.

Yuca, like taro, must be prepared before consumption; do not consume it raw. You may have heard that yuca contains cyanide, which it does, but the yuca you buy at the grocery store is safe.

That’s because there are two types of yuca: sweet and bitter, and the difference is attributable to the amount of cyanogenic glucosides in the root. Sweet yuca is available in the United States, primarily from the Dominican Republic and Costa Rica, and the toxin levels are low enough that peeling and cooking removes them. Bitter, higher-cyanide cultivars can be eaten if treated properly, but you’ll have to travel to Africa or Brazil to try them. Alternatively, you can try them in their processed forms, such as tapioca, manioc meal, and yuca flour.

The yuca root can be used in a number of different ways. We realize we’re sounding like a broken record, but Steven Raichlen describes it as “one of the most versatile roots in the vegetable kingdom.” So get to work:

“Every student in Nigeria has a bag of garri, which is a cereal made by soaking it in cold water and sweetening it with sugar or honey. Garri is also used to prepare eba, a swallow food. Swallow food is a sort of soft food eaten with meals in West Africa, according to Afolayan.

To make suman, a Filipino snack comparable to the Mexican tamal, grated cassava can be fried with sugar and coconut cream, wrapped in banana leaves, and boiled. Indonesian kuih bingka ubi (baked tapioca cake), tapioca puddings, and other cakes are among the delicious recipes.

“Cassava can be fried with butter and garlic after it has been boiled, and it tastes delicious. “However, I only eat cassava as a root approximately once a year,” Flores explains. “It’s much better as a flour for empanadas and baked bread.” Cassava flour can be toasted for a salty side dish or used as the foundation for gluten-free flour tortillas and crackers.

To this perplexing issue, the answer is: it depends. While this may not sound reassuring, please keep in mind that sweet cassava (the variety sold commercially) has very little cyanide, the majority of which is contained in the peel, which is completely eliminated when cassava is properly prepared. Boiling removes at least half of the cyanide content of the root, and other cooking methods like as frying and baking reduce it even further. By the time it’s sold, dried and pounded cassava flour has lost practically all of its cyanide concentration.

Cassava contains cyanogenic glycosides, which when taken, release cyanide into the body. Small traces of cyanide can be removed by thoroughly soaking or cooking the root, but those who consume large amounts of yuca, prepare it incorrectly, or don’t eat enough protein (which helps the body rid itself of cyanide) are still at risk, especially if they consume bitter cassava, which contains up to eight times the amount of cyanide as sweet cassava per kilogram. As a result, the FDA advises against eating bitter cassava since it necessitates a more comprehensive preparation process than sweet cassava to make it safe to consume. Although it can be available in African and South American markets, it is most commonly utilized to manufacture byproducts like as cassava starch, flours, and sauces like Guyanese cassareep, all of which need extensive processing. It is also suitable for the production of bioethanol.

In 2017, there was a case of cassava poisoning in Venezuela that made international headlines. Following the country’s economic collapse and resulting food shortages, 28 people in a Caracas suburb died within days of each other, prompting fears that a deadly virus was spreading inside their neighborhood. Bitter yuca, which is forbidden to sell as food in Venezuela but was peddled by black market merchants hoping to make a quick buck, was the real culprit. Their victims had cooked the deadly tuber in the same way they had prepared the sweet tuber, and hence had not sufficiently processed it to make it safe to eat.

“In the last 11 years, only two or three individuals have asked me if cassava is safe to eat, but I typically reassure them that it is safe to eat when cooked and that many things in our everyday diet, such as apple seeds, cherry pits, or bitter almonds, might be potentially harmful,” Flores adds. When he creates empanadas, he utilizes a cassava flour that has already been prepared and is devoid of contaminants.

Almonds are a good analogy for cassava. Almonds, like the root, come in sweet and bitter varieties, with the bitter kind carrying substantially more cyanide.

Cassava is a controversial crop because so much of the developing world relies on it for food security. Its widespread harvesting and accompanying environmental damage have sparked debate. It’s widely accepted that mismanaging cassava harvesting can cause soil deterioration by depleting key minerals from fields. As the world’s population continues to grow, so does the need for food security and the demand for cassava. As a result, there is widespread deforestation and poorer yields for other important crops.

Cassava, on the other hand, can be beneficial to the environment if harvested properly. According to a recent analysis by the Alliance of Bioversity International and the International Centre for Tropical Agriculture, growing cassava can help restore degraded land and make it suitable for other important crops to flourish. Environmentalists are concerned about additional deforestation in areas designated for cassava harvesting, thus studies on these potential advantages are ongoing. However, the resilient crop will remain a crucial component of our future food supply due to the effects of climate change, such as higher temperatures and more frequent droughts.

“Cassava is used almost as much in Latin America as it is in Africa,” adds Afolayan. “I see it becoming more mainstream, but I don’t believe our communities have done enough to promote it. It hasn’t gotten much attention, yet it’s utilized for far too many things. It’s even used to bake bread.”

As we work to mitigate the effects of climate change, we may anticipate cassava to play a larger part in our daily life. Changes in our environment have prompted study into cassava as a maize substitute, as maize yields have declined as temperatures have risen and yearly rainfall levels have decreased. Fabrics, paper, and building materials like plywood are only a few of the modern applications. Only keep the roots that don’t exhibit signs of damage. Roots that will be stored for more than a week or more should be carefully chosen, as curing will not work on roots that have been severely damaged.

Curing the roots after harvest should be done as a regular procedure with as little manipulation as feasible.

Traditional storage methods for fresh

Due to the difficulty of keeping fresh cassava roots, subsistence farmers have traditionally left the roots in the ground until they are needed and then consumed or processed the roots into a more durable form as soon as they are collected. There are a number of drawbacks to this method. The most significant is that enormous swaths of land are occupied by a crop that has reached maturity and is no longer suitable for cultivation. The longer roots are in the ground, the more fibrous and woody they become, and the less starch they contain. It’s also thought that while the adult roots are still in the ground, their vulnerability to loss is heightened.

All of these procedures are only attempts to reduce moisture loss from tubers, but they can only extend the tubers’ storage life by a few days at most.

Improved low-cost storage methods for fresh cassava

Field clamps, similar to those used for potato storage, worked well for up to eight weeks of storage. A layer of straw is spread on a dry floor, followed by a heap of 300-500 kg of roots, another layer of straw, and finally a covering of soil. To give some ventilation, openings were placed at the bottom of the mound. This storage method was found to be challenging to maintain in areas where seasonal climate variations made it difficult to regulate or enhance airflow, as well as ensure that the clamp’s floor stayed dry during wet seasons. It also necessitated a large amount of labor.

Starting with a layer of sawdust and ending with a layer of cassava roots, the procedure entails alternate layers of sawdust and cassava roots. Wood shavings, peat, or any other acceptable packing material can be used instead of sawdust. The packaging material, on the other hand, must be damp but not wet. According to the study, 75 percent of the roots remained edible after four weeks in storage if they were packed promptly after harvest. Only 50% of the roots were deemed satisfactory after only one day of delay. This method has been employed for some export markets, but the greater transportation costs associated with the use of box containers have prevented it from being used in the domestic market.

Improved higher cost techniques

For the storage of fresh cassava, sophisticated technologies such as refrigeration, deep freezing, waxing, controlled environment, and chemical treatments have been suggested. Freezing and waxing have mostly been used for export markets in Europe and America, where buyers of African and Latin American descent are willing to pay a premium. These approaches necessitate specialized equipment and abilities, as well as a significant investment in finance.
