Now, if you’re failing to lose weight, have autoimmune or digestive troubles, or are simply unhappy with a persistent health problem, it’s worth considering whether lectins are holding you back.
Because lectins are present in so many foods, it is hard to eat a lectin-free diet. Although not all lectins are dangerous (see Tip #5), there are a number of those that are, and some foods have significant levels of them. Because you may be consuming a combination of high lectin meals that cause significant toxicity, it’s crucial to examine the overall effect.
Corn lectins are one of the highest in lectin meals, and they are particularly resistant to heat, making them difficult to diminish by cooking.
Corn is a common food in the United States, however it is also genetically engineered (unless organic) and one of the most allergic foods.
Corn-fed Meats: This category contains the majority of meats available in supermarkets and restaurants. We are what we eat, and animals are no exception. They are fed lectin-rich corn and soy during their development. The goal is to get them fat so they can sell them. Lectins also make us humans obese. Buying certified grassfed meat is the best way to avoid them. More information can be found at the American Grassfed Association. On the label, look for “100% Grass Fed and Finished.”
Casein A1 Milk: Some cows produce milk containing casein A1 protein, which is a lectin-like protein termed beta-casomorphin, due to a genetic mutation in cow populations. It adheres to the insulin-producing cells in the pancreas, triggering an immunological response against humans who drink milk and cheese from these cows. Casein A1 is produced by the majority of cows nowadays, and this is the milk and cheese found in store-bought dairy. Many people who think they’re lactose intolerant are actually reacting to casein A1 in milk. If you must eat dairy, choose casein A2 dairy products from goats, sheep, water buffaloes, or specifically Belgian Blues, Guernsey, or Brown Swiss cow breeds. The most popular breed of cow is the Holstein, whose milk contains casein A1. Jersey cows can produce either, so double-checking and establishing the source is crucial.
Peanuts and Cashews: Although commonly referred to as nuts, peanuts and cashews are legumes with high lectin concentration. Cashew harvesters must wear protective gloves because the shell around the cashew is so irritating. Cashews are related to poison ivy in terms of their botanical family, and they cause a lot of inflammation.
Tofu and edamame, both unfermented soybean products, contain the highest levels of lectins and should be avoided.
Because of the fermentation, traditionally fermented soy products such as miso or tempeh have a substantially lower lectin level if they are organic.
Peas, green beans, lentils, split peas, and all other beans belong to the legume family, which includes peas, green beans, lentils, split peas, and all other beans (e.g. red kidney, black, white, garbanzo). When used sparingly, proper soaking and cooking, as well as picking reduced lectin choices like Great Northern beans, green beans, and lentils, can make these a viable option. To decrease lectins, most canned beans have not been adequately soaked or boiled. Lectin levels are higher in white kidney beans and soybeans.

Tomatoes, potatoes (excluding sweet potatoes), eggplants, bell peppers, and goji berries are examples of nightshade fruits and vegetables. Because the skins and seeds contain the most lectins, just peeling and deseeding them can drastically reduce lectin content while also reducing frequency and portion size. Cooking only reduces the amount of lectins in potatoes by 50-60%.
Gourd Family Fruits: Although gourds are commonly referred to as vegetables, they are actually fruits that include all squash kinds, pumpkin, and zucchini. Some of these, like nightshades, may be peeled and deseeded thoroughly, and heating will also help reduce lectins.
Sprouting, fermenting, soaking high lectin foods overnight, and boiling them reduces the lectin level considerably, making them safe for most individuals. Here are some additional lectin-reduction tips, in addition to removing seeds and peel.
Tip #1: If you choose to consume beans, make sure you properly prepare and cook them. Never eat raw or undercooked beans. They can have both immediate and long-term consequences. Before cooking, soak the beans for at least 12 hours in water, changing the water often. Rinse the beans thoroughly, discarding the soaking water. Cook on HIGH heat for at least 15 minutes, ideally in a pressure cooker like the InstaPotTM.
Tip #2 If you eat grains, keep in mind that the only way to eat gluten-free bread is to buy organic and raise it using traditional yeast or sourdough processes, which break down gluten and other dangerous lectins.
You’d have a hard time finding this at our supermarkets. It must be made from scratch or purchased from a genuine artisan bakery.
Tip #3 Sprouting deactivates lectins in a variety of beans, seeds, and grains. Exceptions exist, such as alfalfa, where sprouting raises lectin levels. Tip #4 Investing in a pressure cooker is a good idea.
Plant lectins are best neutralized when boiled under pressure for a short period of time. For example, this method is perfect for beans, lentils, quinoa, and rice. Plant meals should not be cooked in slow cookers since the low temperature increases lectin content.
Tip #5 – Many foods include some harmless lectins. Asparagus, garlic, celery, mushrooms, and onions have the lowest lectin levels. Cooked root vegetables including sweet potatoes, yucca, and taro, as well as leafy greens, cruciferous vegetables, avocados, olives, and olive oil, are all good sources of lectins. They are unrestricted in their consumption.
While lectins can be harmful to your health, eliminating them from your diet is neither practical nor desirable.

The book advocates for a lectin-free diet as a treatment for autoimmune illnesses, allergies, and cancer. The Bulletproof Diet advocates a lectin-free diet as well.
Gundry and other proponents of the lectin-free diet think that lectin-rich foods cause inflammation, weight gain, and are hazardous to the body. However, little research has been done on the impact of lectins on the human body. Toxicon released a review in 2004 that looked at the minimal evidence on lectin and concluded that it is an antinutritive and/or poisonous chemical. 1 Because lectin prevents digestion in the gastrointestinal (GI) tract, it can bind to the celllining and produce a cascade of detrimental local and systemic effects, according to Brazilian researchers. Foods that contain a lot of lectin, like kidneybeans, aren’t consumed uncooked. The lectin concentration is greatly reduced after soaking and cooking, and so isn’t a potential health risk. Furthermore, the well-known health benefits of eating whole grains and pulses, such as reduced inflammation, much exceed any concerns about the small amount of lectin included in these foods.
Despite the fact that the scientific literature raises theoretical concerns regarding lectin’s possible toxicity, research also reveals that lectin has health benefits in terms of GI metabolism and cancer prevention.
