The main distinction between gum paste and sugar paste is that the former hardens and is not recommended for consumption while the latter does not.
Cake decorations can be made with either sugar paste or gum paste. While gum paste has a hard texture from tylose powder, sugar paste has gelatin, which makes it flexible. When dealing with sugar paste and gum paste, bakers and cake artists employ a variety of tools such rolling pins, cutters, and moulds. To put the decorations made with these kinds of paste together, they also utilize edible glues like gum glue or thinned fondant.

Step 1: Cut the pieces out using the felt succulent templates
With my Cricut Maker, I enjoy cutting felt with the rotary blade. Use the firm grip mat when using the blade if you don’t have a Maker.
Gumpaste or fondant—which is superior?
Because fondant doesn’t dry out completely like gum paste does, it is a much more flexible edible sugar dough that is used for cake decoration.
It can be used to decorate cakes or cover them. With the addition of food coloring, fondant may be easily customized in a variety of colors to suit your preferences. While fondant can be used to construct cake topper figurines and cake decorations, it cannot be rolled out as thinly without breaking and will not dry as hard as gum paste, therefore it cannot be utilized to produce precise details.
Gumpaste is too soft.
Solution: If the gumpaste is too soft, add a tiny bit of Wilton Gum-Tex or Tylose powder at a time until the paste feels firmer, being careful not to add too much at once. If the gumpaste is very sticky, work confectioner’s sugar into it until it no longer feels sticky.
Gumpaste is too hard.
Cause: When gum paste is left out and exposed to air for too long, it quickly dries out and becomes too hard to use. Before using it for decoration, it must first be softened so that you can handle it more easily. On the other hand, if you’re using professional gumpaste and you notice that it’s so rigid that you can’t bend it, you might have gotten a defective batch and should return it to the store to get a new one.
Solution:
Allow the gumpaste to come to room temperature first if it was kept in the fridge. The gumpaste should next be kneaded and heated with your hands. Gumpaste can be heated in the microwave for 10 to 15 seconds to see if it softens it enough. Keep in mind that you should only resort to using the microwave if all other methods have failed to soften the gumpaste to your preferred consistency.
Gumpaste is too dry.
Cause: This occurs when using specific commercial gumpaste brands. If you added deeper colors to the paste, which usually dries it out, it might also happen.
Knead in vegetable shortening like Crisco or Trex as a solution. Work it back up, and it will become supple and malleable again quickly. Watch out for Tylose powder while producing gumpaste from scratch; if you don’t want the paste to dry out quickly, use less of it.
Gumpaste has cracks, or is tearing up.
Cause: Either the gumpaste was not sufficiently kneaded or it was not sufficiently rolled thin. It can also be because the paste is either too soft or too hard in consistency. Because of the gum added to the gumpaste, your ornamental items may split when the paste dries more quickly and becomes firmer. Another reason for the cracking of gum paste is the overuse of confectioner’s sugar, which can dry up the paste and make it crack.
Solution: To make gumpaste easier to handle, use vegetable shortening while working with it.
When creating decorations like flowers, people, and animals, gumpaste works perfectly. The kneading and preparation should also be highlighted. A wonderful gumpaste base is necessary in order to create a great sugar flower or a beautiful figurine.
Can I substitute fondant for gumpaste?
A rolled frosting known as fondant is used to cover cakes and cupcakes. It is rolled out with a rolling pin and is soft and malleable before being draped over a cake. Since fondant is an icing, it never becomes as firm as gum paste.
Glycerine, a crucial component of fondant, is what gives it a distinct personality from gum paste. Fondant is perfect for coating a cake because glycerine keeps it soft and malleable. Additionally, it has gum tragacanth, which is comparable to tylose and gives fondant its elasticity. Because of this, the fondant never completely hardens, making it unsuitable for modeling three-dimensional models.
