Agave nectar is commonly available and can be obtained in a variety of supermarkets. It’s usually found in the same aisle as other sweeteners or in the natural foods area.
How do you get agave?
After seven to fourteen years of growth, the leaves of the Agave americana and A. tequilana plants are chopped off and used to make agave syrup. The juice is then removed from the pia, or core, of the agave. The juice is filtered, then boiled to break down the polysaccharides (complex sugars) into simple sugars. Fructan, a polymer of fructose molecules, is the primary polysaccharide. After that, the filtered juice is condensed into a syrupy liquid that is slightly thinner than honey. Depending on the degree of processing, the color ranges from light to dark amber.
Agave salmiana and Agave tequiliana are treated differently. The plant generates a quiote stalk as it grows. The stalk is chopped off before it fully develops, leaving a hole in the plant’s core that fills with a liquid known as aguamiel. Every day, the liquid is collected. The liquid is then heated, breaking down its complex components into fructose, glucose, and sucrose while preventing pulque fermentation.
A US patent for a process that uses enzymes derived from the mold Aspergillus niger to transform the inulin-rich extract into fructose describes an alternate approach for processing agave juice without heat. In more detail, the polyfructose extract obtained from mashed agave pulp is hydrolyzed with inulin enzymes (obtained from Aspergillus niger) to produce a hydrolyzed fructose extract using a chemical technique patented in 1998. The syrup is made by concentrating the fructose. The United States Food and Drug Administration does not have agave syrup (nectar) on its list of foods generally recognized as safe (GRAS).
Coconut nectar
Coconut nectar is a fantastic agave syrup substitute since it has the same syrup consistency and sweetness as agave, but it isn’t as extensively processed.
This sort of nectar is made from coconut trees, and the procedure is quite similar to that of maple syrup.
The only difference is that maple syrup has undergone extensive processing. The coconut tree is tapped, resulting in a nutrient-dense “sap” that contains a variety of minerals, 17 amino acids, Vitamin C, and broad-spectrum B vitamins. 8
Blackstrap molasses
This natural sweetener is a by-product of the sugar refining process; it contains 19 calories per teaspoon and has the same carbohydrate content as sugar. 9
Vitamin B, iron, potassium, and other minerals are all abundant in blackstrap molasses. Vegans can supplement their iron intake by eating molasses.
Brown rice syrup
Is a thick syrup prepared from brown rice starch that has been broken down. It contains trace levels of calcium, magnesium, manganese, and zinc, although it is not as nutritious as brown rice. 10
Brown rice syrup, which has a honey-like viscosity, is frequently substituted for high fructose corn syrup in processed foods. It has a gooey consistency and a sweet flavor of its own, but because it has a high GI, it should be used in moderation, just like agave.
Maple syrup
The GI of maple syrup is lower than that of sugar, making it a healthier alternative to table sugar. Zinc, calcium, and potassium are just a few of the vitamins and minerals found in it. 11
Grade B maple syrup is more concentrated than Grade A, which means it’s better for baking because it’s sweeter. However, keep in mind that it still includes a significant amount of sugar.
Stevia
Stevia, a calorie-free sugar agave syrup substitute, was one of the first widely used sugar substitutes. It’s basically a powder manufactured from the leaves of the stevia plant, which is native to Paraguay. 12
Stevia is said to be 300 times sweeter than regular sugar. However, because it does not include any sugar molecules, it has no glucose and is therefore calorie-free. It won’t induce blood sugar spikes as a result of this, which is why it’s such a popular sugar alternative among diabetics. The sole drawback is the harsh aftertaste, which has been described as liquorice-like.

Brown Sugar Simple Syrup: In a saucepan over medium heat, combine 1 part honey and 1 part water to make brown sugar simple syrup. Bring to a moderate heat and cook for 5 minutes, or until the brown sugar has dissolved completely in the water and the syrup has thickened somewhat.
Simple Syrup with Coconut Sugar: In a saucepan, add 1 part coconut sugar and 1 part water over medium heat to make simple syrup with coconut sugar. Bring to a moderate heat and cook for 5 minutes, or until the sugar has dissolved completely in the water and the syrup has thickened somewhat.
Agave Simple Syrup: In a saucepan over medium heat, combine 1 part agave with 1 part water to make agave simple syrup. Bring to a low heat and cook for 5 minutes, or until the agave is completely dissolved in the water and the syrup has thickened somewhat.
Is agave like honey?
Agave nectar is dark amber in color, yet its flavor is more neutral than honey. One tablespoon of the sweetener has about 60 calories, whereas the same amount of granulated sugar and honey has about 45 and 60 calories, respectively. Because it’s 1 1/2 times sweeter than sugar, you can use half as much. Agave can be used to replace granulated sugar in baked goods and dissolves well in cold beverages like smoothies and iced tea (see instructions below). Because of its mild flavor and over-hyped nutritional benefits, agave nectar is used by many food manufacturers in goods such as energy drinks and bars.

9. Yes, but where does the worm fit in? Tequila’s bottle does not include a worm. The worm, sometimes known as gusano, is linked to mezcal. A few businesses began a marketing tactic in the 1940s, attributing aphrodisiac and magical properties to the worm and the person who shot it. As you might expect, consuming the worm has no effect on desire, and premium bottles of tequila or mezcal are not marketed with worms in them.
