Despite its spiky look, the agave is a succulent plant that belongs to the Century plant family and the genus Agavaceae, and is botanically related to sansevieria, yucca, and amaryllis. The agave plant is a member of the lily family, according to the most basic and widely recognized description.
Agaves are found in 166 different species, 125 of which are found in Mexico. These come in a variety of sizes and colors, but only one, Agave Tequilana Weber Azul, has been legally allowed to be used to create tequila since 1964. The plant was called after a European botanist named Weber because of the subtle blue color to its green foliage, which is visible while viewing a complete agave field in Jalisco. Many distilleries close for holidays and maintenance during the rainy season due to muddy grounds and other harvesting challenges.
The agave flower is pollinated by a certain type of bat (Leptonycteris nivalis) and bears seeds and offshoots (hijuelos), which develop in the soil around the plant from its rhizomes (ground roots) and also form on the flower stalk (apart from human biotechnology) (quiote).
Commercial growing of seeds is uncommon. The hijuelos begin to form after the second year of growth, but they are usually not removed to propagate new plants until the third to fifth year, according on the farmer’s preferences. Agave farmers use the terms “lime, orange, and grapefruit sized children” to describe the size of hijuelos. These are planted by hand in straight rows with 2,000 to 4,000 plants per hector, with one to two meters between plants and three meters between rows (2.5 acres). Micro propagation is increasingly being used by several larger producers (reproducing baby plants using adult plant tissue).
All agave farmed for tequila production must be registered with the Tequila Regulatory Council to meet with the Mexican Official Standard (CRT). Over 22,000 registered agave farmers cultivate 400 million agave plants on 125,000 hectors (308,875 acres) of land within the DOC Tequila zone, accounting for about 3% of the total available acreage.
The agave, like all plants, needs to be cared for. Weeding is required twice a year, and the plants are inspected for infestation and fungal diseases on a regular basis. With a machete, some farmers clip off the tops of the agave leaves. This method, known as chaponeo o barbeo, decreases the chance of an insect called picudo infesting the hollows that occur at the tips of the leaves. It also allows for closer spacing between agave plants. Plants are severely harmed by cattle and fire, and snow occurs once every 100 years. Snow killed millions of new plants and severely harmed more established older crops in 2005.
As the female plant reaches maturity in April, a tall flower stalk called a quiote (pronounced ‘Kwai-O-Tee’) grows from the plant’s center top. The quiote can grow up to 6 meters (20 feet) tall, rendering the agave worthless for tequila manufacturing because the plant’s energy reserves (in the form of inulin) are used to produce the quiote. As a result, the quiote is cut off, causing the sap to flow to the plant’s heart, or pia. The conclusion of the agave’s lifetime is marked by the sprouting of the quiote, after which the plant will die.

In places where wet seasons were followed by long dry periods, most succulents (such as aloes, hawthorias, crassula, and echeveria) originated under less harsh conditions than cacti. The majority of them have leaves. Their leaves gradually grew fattened by water-storing tissues and covered with a waxy or horny substance that reduces evaporation from the surface to help them get through the dry spells.
From Canada to Central America and the West Indies, and south to Chile and Patagonia, the Cactus (Cactaceae) family can be found (southern end of South America). The largest collection is in Mexico, although many are also found in the western deserts of the United States and high in the Cordilleras of Peru, Bolivia, and Argentina.

Succulents can be found in semi-arid parts of North and South America, Asia, and Africa, but many also live in rain forests. Succulents flourish in the highlands despite the brutal cold, strong winds, and poor soil.
