What’s the difference between a succulent and a cactus? The only plant that can survive in a blazing south window where the sun is magnified by the glass is a cactus. Any plant that stores water in juicy leaves, stems, or roots in order to resist recurrent drought is known as a succulent. Some people omit fleshy plants like epiphytic orchids, while others accept non-fleshy desert plants (yuccas, puyas).

Cactus (plural cacti) is a type of succulent that can hold moisture but is classified as a different category (Cactaceae). Not all succulents, on the other hand, are cactus. Succulents are members of approximately 40 botanical families found all over the world, including close cousins of the pointsetta, geranium, lily, grape, amaryllis, crassula, daisy, and milkweed.

Cactus is derived from the Greek term kaktos (spiny plant), which was used to describe a species that turned out to be a sort of artichoke rather than a cactus. Linnaeus (the plant classifier) gave the name Cactaceae to a group of plants with distinctive characteristics such as thick stems that functioned to hold water, prickly or hairy coverings, and few, if any, leaves 2000 years later.

Cacti are easily recognized. They have no leaves, with a few exceptions, as a result of their effort to survive. In times of drought, their stems are transformed into cylinders, pads, or joints that retain water. Evaporation is reduced by thick skin. For protection against browsing animals, most species have spines or bristles, while others don’t, and others have long hair or a wooly coating instead. Flowers are typically huge and colorful. Fruit may be both colorful and edible.

In the seedling stage, all cacti have leaves. For a brief period each spring, some develop tiny leaves on fresh growth. Most cactus progressively lost their leaves as shifting temperature conditions changed native environments into deserts, evaporating too much limited water into the dry air. They started storing available water in their stems instead. Many may change their shape to change the area of their evaporation surfaces in response to changing conditions. Accordian-like ribs can stretch when there is plenty of moisture and compress when there isn’t.

In places where wet seasons were followed by long dry periods, most succulents (such as aloes, hawthorias, crassula, and echeveria) originated under less harsh conditions than cacti. The majority of them have leaves. Their leaves gradually grew fattened by water-storing tissues and covered with a waxy or horny substance that reduces evaporation from the surface to help them get through the dry spells.

From Canada to Central America and the West Indies, and south to Chile and Patagonia, the Cactus (Cactaceae) family can be found (southern end of South America). The largest collection is in Mexico, although many are also found in the western deserts of the United States and high in the Cordilleras of Peru, Bolivia, and Argentina.

The majority of succulents are native to desert or semi-arid regions in warmer climates (Mexico, South Africa). Some (sedums, sempervivums) are native to colder areas, where they thrive on sunny, rocky ledges. Although there are numerous succulents throughout the world’s deserts, not all succulents are desert plants. They can be found in mountains, forests, and areas near lakes and seas. Succulents can be found in semi-arid parts of North and South America, Asia, and Africa, but many also live in rain forests. Succulents flourish in the highlands despite the brutal cold, strong winds, and poor soil. An unusual pollinator.

The agave plant’s primary pollinator is the Mexican long-nosed bat. The bats drink on the agave’s nectar using their long muzzles, much like hummingbirds do with smaller flowers. They spread pollen that gathers on their coats as they graze when they flit between plants.

Long-term payoff.

The agave plants must grow untouched for six to eight years in order to obtain the high fructose levels required for premium agave syrup. They can be harvested for processing once they’ve reached maturity.

A special harvest.

During harvesting, a highly experienced Mexican expert known as a jimador uses a coa, a long tool with a very sharp round knife at the end, to peel the agave leaves from the plant.

Getting to the heart of it.

When the agave plant’s pin, or heart, is harvested, it weighs around a hundred pounds. After a jimador has peeled the leaves, this huge portion of the plant is picked by hand.
