Honey and agave nectar are both natural ingredients, but how they end up on the grocery store shelf differs.
Agave nectar
Agave nectar is a syrup made from the agave plant (nectar is really just a marketing term). It’s derived from the blue agave plant’s fluid. This is the same plant that tequila is made from.
- The filtered juice is heated to break down its constituents into fructose, a simple sugar.
Before agave nectar can be ingested, it must go through a number of stages. Because the refining process generally results in the loss of some (or all) of a food’s inherent health benefits, processed food may be less healthy.
Honey
Bees produce honey. These active tiny insects harvest nectar from plants to make honey. Honey, unlike agave nectar, does not need to be treated before use. Certain brands of honey, however, are heated (pasteurized) before storage to prevent crystallization and kill microorganisms. Raw honey is the better option because it is all-natural and unprocessed.
Is agave highly processed?
Agave plants can be found from the southern United States to northern South America. It’s the same plant that goes towards making tequila.
The blue agave plant produces the majority of agave sweeteners. Its nectar isn’t available in its natural state. It’s extensively processed, just like high-fructose corn syrup, before you can put it in your tea, top your pancakes with it, or find it in an energy drink, bar, or other product.
A tablespoon of agave contains roughly 60 calories, compared to 40 calories for the same amount of regular sugar. So you’d have to use less agave to conserve calories, which should be achievable because agave is sweeter.
Is agave actually healthier?
Agave is less toxic and more natural, but it should be avoided by persons who are regularly monitoring their blood glucose levels. The high sugar level can lower insulin sensitivity and wreak havoc on the liver. Agave is also a sweetener with more calories than table sugar.
People with diabetes should avoid adding sugars to their food and instead use fruit as a sweetener.
How is agave digested?
Agave syrup might be a better name for the sweetener frequently referred to as agave nectar.
It has little resemblance to the traditional sweetener manufactured by Mexicans in the past.
However, the commencement of the manufacturing process is the same. To obtain the sweet sap, the plant is first cut and squeezed.

When we eat agave syrup, our bodies break it down for energy in the same manner that other sugars are broken down. Glucose is absorbed by our cells with the help of insulin, but fructose is metabolized by the liver and does not require insulin for absorption. Agave syrup has a lower impact on blood glucose levels than most other sugars due to its higher fructose concentration.
When eating excessive amounts of fructose, some people have problems absorbing it, and others are unable to absorb it at all. It is recommended that affected individuals monitor or limit their fructose intake, or avoid it totally in the case of the uncommon genetic condition known as hereditary fructose intolerance (HFI). Every year, about one in 20,00030,000 persons is born with HFI. Foods and beverages containing fructose, sucrose, or the sugar alcohol sorbitol must be avoided by people with HFI because they cannot metabolize fructose.
Does agave syrup have health benefits?
Although agave syrup is not inherently healthier than other sugars, it does have a few advantages that make it a desirable option for some. Agave syrup, for example, has a thinner viscosity than honey and is thus more soluble in liquids, allowing it to blend easier into cold beverages. Agave syrup is also sweeter than other sugars with a better balanced fructose-glucose ratio. Because agave syrup is sweeter, it requires less calories to equal the sweetness of sugars like sucrose.
Because of its higher fructose concentration, agave syrup elevates blood sugar less than most other carbohydrates. Despite this, because fructose is digested differently than glucose, there has been disagreement over the years over the influence of fructose on health. According to certain studies, fructose may be particularly harmful to one’s health. More recently, a systematic review and meta-analysis of controlled human trials published in 2018 indicated that the harmful health effects of fructose-containing sugars were caused by sugars’ contribution to ingesting excess calories, rather than fructose.
The American Dietary Guidelines do not specify which types of added sugars should be consumed. Instead, they advise restricting all added sugars, including agave syrup, to less than 10% of total daily calories.
Which is healthier honey or agave?
If you have to choose between honey and agave, honey is the healthier option. Honey is mostly composed of fructose, whereas agave contains a higher percentage of glucose. Honey has a number of health benefits that aren’t available from other natural sweeteners. Honey is fundamentally more like table sugar than agave, despite the fact that both are plant-based and related to table sugar. While honey is the better option, agave may be more useful in modest amounts than table sugar.
How is tequila made worms?
The worm in the tequila bottle (…or tequila lollipop) may be ingrained in our popular culture, but it is actually a prevalent fallacy.
“The worm is never discovered in tequila,” explains Heriberto Oviedo, the tequilier (tequila’s equivalent of a sommelier) at the Ritz-Cantina Carlton’s Beach restaurant in Key Biscayne, FL: “The worm you see is in mezcal, which is frequently mistaken for tequila.”
Both spirits are manufactured by distilling the agave plant, and while mezcal can be made from any of 250 kinds of the cactus-like succulents, a bottle must contain at least 51 percent blue agave to be classed as tequila (agave tequilana). The finer the bottle, the higher the percentage of blue agave. Tequila is a sort of mezcal, however mezcal is not the same as tequila, because only mezcal contains worms.
That “worm,” according to Anthony Dias Blue’s Complete Book of Spirits, is actually a larva of one of two varieties of agave moths known as maguey worms. Gusano refers to the larvae, and with gusano refers to the bottles of mezcal that include them.
But what’s with the gusano? There are a plethora of theories to choose from. The origins can be traced back to a distiller named Jacobo Lozano Páez, who discovered that the larvae modified the taste of the agave and began using it in his drinks in 1940. Others think that finding it in a glass will bring good fortune and strength to the person who finds it. Dias Blue states in his book that the insect acts as proof of a mezcal’s power; to pickle the gusano, the spirit must have a high alcohol content.
Oviedo is a practical person. “Mezcal brands, more than anything, employ the worm for marketing purposes,” he explains. “There were traditions and myths that the worm would grant exceptional abilities, but none of them are genuine.”

What is tequila made from what plant?
Tequila is a Mexican distilled beverage created from the Weber blue agave plant. Huge spikes emerge from a central core known as the pina on the blue agave plant. The pina is the portion of the plant that is used to produce tequila after the leaves have been removed. It’s high in sugar, heated and mashed, and the sugars are fermented by natural yeast, resulting in alcohol. Then it’s distilled, and blanco tequila, which some consider to be the best for margaritas, may be bottled right away. It is bottled with a label declaring that it is reposado if it is moved to an oak barrel and aged for at least 60 days. Some distilleries age their whiskey in antique bourbon barrels, which adds additional flavor characteristics. The tequila takes on an amber tint and gets even smoother after being matured in small old oak barrels for more than a year. These tequilas are known as Anejo and are exclusively meant for sipping and savoring, according to connoisseurs.
Is tequila agave based?
Tequila and mezcal are both created from the agave plant’s extracted core, often known as the “pia.” The parallels in manufacture, however, cease there. Tequila is usually made by heating the agave in industrial furnaces and then distilling it twice or three times in copper pots. Mezcal, on the other hand, is distilled in clay pots after being heated in earthen pits lined with lava rocks and filled with wood and charcoal. While some large-scale mezcal producers have adopted modern processes, artisanal mezcal producers continue to use the more traditional approach, which is what gives mezcal its smokiness.
