Agave nectar is commonly available and can be obtained in a variety of supermarkets. It’s usually found in the same aisle as other sweeteners or in the natural foods area.
How do you get agave?
After seven to fourteen years of growth, the leaves of the Agave americana and A. tequilana plants are chopped off and used to make agave syrup. The juice is then removed from the pia, or core, of the agave. The juice is filtered, then boiled to break down the polysaccharides (complex sugars) into simple sugars. Fructan, a polymer of fructose molecules, is the primary polysaccharide. After that, the filtered juice is condensed into a syrupy liquid that is slightly thinner than honey. Depending on the degree of processing, the color ranges from light to dark amber.
Agave salmiana and Agave tequiliana are treated differently. The plant generates a quiote stalk as it grows. The stalk is chopped off before it fully develops, leaving a hole in the plant’s core that fills with a liquid known as aguamiel. Every day, the liquid is collected. The syrup is made by concentrating the fructose. The United States Food and Drug Administration does not have agave syrup (nectar) on its list of foods generally recognized as safe (GRAS).
Is agave syrup the same as agave nectar?

What drink is made from agave?
