How To Make Yucca Extract?

Nandina offered a recipe for making your own yucca extract, which I copied here. I followed the instructions exactly, but the liquid does not foam. Is there a reason for this? Will the extract, despite its lack of foam, serve as a spreader/sticker?

Purchase a yuca root (notice the spelling of yuca) from the vegetable section of your supermarket. Look for one that weighs around 1 1/2 pounds. Peel and cube the root, then coarsely grind it in a food processor with one cup of water. Combine with 4 cups of water and let aside for 24 hours on the counter. Save the liquid after straining the yuca and liquid through a strainer. Pour the liquid through the sieve that has been lined with a paper towel for final straining. Fill ice cube trays halfway with the strained yuca liquid; freeze and store for later use.
